Who doesn’t love a yummy pumpkin soup in winter! We have the best recipe, and have tried and tasted it this week. It’s creamy, and super easy to make in your slow cooker. Just turn it on and walk away!
3/4 of a small pumpkin
3 medium sized potatoes
1 small carton thickened cream
2 small, or 1 large onion
LET’S MAKE SOME SOUP!
Chop up three quarters of your small pumpkin into chunks, about 4-5cm big (No need to chop it too small)
Chop up your potatoes & onion too (Onion can be in half rings. No need to dice)
Put it all in your slow cooker
Fill your slow cooker with water. You want to fill it so you can just see the top of the water, however you still want pieces of pumpkin to be sticking out the top of the water line (not fully submerged). Too much water will make your soup too watery. I used a medium sized 3.8L slow cooker
Turn on your slow cooker to High, walk away and leave for 5 hours to cook
After 5 hours, turn the slow cooker off
Remove 1.5 cups of water from the pot (just get a cup and dip it in to remove some of the water)
Using a stick mixer, mix down all of the ingredients in the slow cooker pot. You want it so it turns to a smooth soup consistency
Add in the small carton of thickened cream and stir through with a spoon
